Pinterest Recipe Trials Continue...

Monday was an awful depressing rainy day here in Toronto this week so I decided some comfort food was in order. Returning to my Pinterest recipes trials I decided to try a Turkey Chili Soup I found at Skinnytaste.com.
I've changed up a few ingredients according to our tastes and to make it gluten free. I remember reading somewhere you can't have chili without corn bread so I used Bette Hagmans recipe for Springy Corn bread to serve on the side.





1 package lean ground turkey
1 onion, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1 can tomatoes with green chilies
1 cup frozen corn
1 can kidney beans, drained and rinsed
1 cup Passata tomato sauce  
2 tbsp gluten free taco seasoning**
2 1/2 cups low sodium chicken broth

2 Tbsp. chili powder
2 tsp ground cumin
2 tsp garlic powder
2 tsp paprika
1 tsp oregano
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp crushed red pepper flakes

Place the taco seasoning ingredients in a small container and mix well. Set aside.

Brown turkey on medium heat in a large pot. When cooked through, add onions and pepper, cook for 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, taco seasoning and chicken broth. Bring to the boil and simmer about 15-20 minutes.

I topped mine with sour cream, grated cheese and sliced snap peas. And served it with a wedge of Gluten Free Corn Bread. 




Yellow Cornmeal 1 cup
Xanthum Gum 1/2 tsp
Egg Replacer 1 tsp
Sugar 1/4 cup
Baking Soda 1 tsp
Baking Powder 1 tsp
Salt 3/4 tsp
1 cup Plain Yogurt
2 Eggs, Lightly beaten
2 tbsp Margarine, melted
1/4 cup Orange Juice
Preheat oven to 400F. Lightly grease and flour your baking pan. I used an 8" round pan.
Combine the dry ingredients, mix well and set aside.
Blend yogurt, beaten eggs, melted margarine and orange juice together. Add to the dry ingredients and mix. Place the mixture in the prepared pan and bake for 20-25 minutes or until the bread springs back when pressed. Serve warm or at room temperature.
